Chicken Egg Roll (Chicken Frankie)

This is one of the most popular street food in Mumbai, it is obviously one of the loved fast food by all teenagers and adultss at the same time. Usually we are more skeptical on gorging on the outside food not knowing how its made and wat ingredients are used. If they are fresh or leftover or whether have been used taking care of hygiene. For those who are worry about hygiene can have this dish made at their home. As you all have read my earlier blogs I do not follow any specific style or recipe. I have something new in my receipes to make it taste different or rather rightly said give my touch to it.

I tried this at home and my husband was head over heels about this dish. Normally my husband does not intake more than two rotis, but when served him this dish he unknowingly had eaten more than two. A healthy yet a tasty way to take care of your loved one's.

Ingredients:
Chicken Marination:
500 gms Chicken Boneless (small pieces)
1 teaspoon Coriander Powder
1 teaspoon Garam Masala
1 tablespoon Red Chilli Powder
1/2 teaspoon Turmeric Powder (Haldi)
1 teaspoon Lemon Juice
1 teaspoon Fagita Seasoning (Available in Supermarket- Its Optional)
Coriander chopped
2 tablespoon oil

For Dough Kneading:
3 cups of Maida (All purpose Flour)
1 cup of Plain Flour (Wheat Flour)
1 teaspoon oil
Salt to taste
Water as per required

For Egg Mixture:
2 Eggs (brown/white/organic)
1-2 Green Chilli (Chopped)
1 tablespoon Onion Chopped
Coriander leaves Chopped
Black pepper Powder (pinch)
Salt

For assembling:
1 thinly sliced onion
1 thinly sliced capsicum
1/2 teaspoon chat masala
Mix in a bowl all three ingredients

Preparation:
Method for Chicken:
Wash and clean the chicken and pat dry in a bowl.
Add fagita seasoning,corainder powder, garam masala, red chilli powder, turmeric powder, lemon juice and salt. Mix well and let it rest for 2 hours.
Heat oil in a pan and add he marinated chicken to the pan.
Mix well and let it cook good for 15-20 mins.
Make sure the chicken is not half cooked, you could check by inserting a knife or fork and see if it goes through entirely.
Once chicken is cooked well add coriander leaves and let it cool

Dough Kneading:
Take the mentioned proportion Maida and plain flour in a bowl.
Add salt and water appropriately and mix well.
Make sure the dough is not too hard as it will make it difficult to make rotis.
At the end add oil and knead well in order to get soft rotis.
Keep a damp cloth on the dough to avoid it getting harder.

Egg mixture method:
Break the eggs ina  bowl, to it add chillies, pepper, salt, onions and mix well with a fork and keep it aside.

Assembling the chicken roll:
Heat a tawa on medium flame not too high.
While the tawa is heating up,take the dough and make equal portions in order to make rotis.
Take one portion and make as thin roti as possible. Maida will have a tendency of contracting so make sure the roti is big enough to accomodate all ingredients in it without opening.
Once the roti is big enough, add chicken mixture on centre of the roti alongwith sliced onion and capsicum.
Add egg mixture over the chicken already on the roti.
After that lift the edges and fold it to give a shapr of a frankie which happens to be rectangular.
Make sure all edges are pressed and stick to each other, if they do not add little drop of milk/water/egg mixture to close it tightly.
Take the roll and put it on tawa and add 2 teaspoons of oil around the roti to cook it well.
Make sure the roti is cooked from all sides and kepp flipping delicately to cook it.
Once all sides are cooked remove it from tawa and cut it in half.
Serve hot alongwith pudina chutney/sauce.
 
                                               


TIP: This recipe can also be prepared as above mentioned with paneer/potato(boiled). If using potato there is no marination time. Just peel the boiled potatoes, add mentioned masalas and salt, and start assembling with other ingredients. Vegetarians can avoid using Egg mixture.
