Chicken Kheema Pav

Usually Kheema is prepared with either Goat Meat (Mutton) or Chicken Meat. with addition to bunch of spices. Kheema is savored with hot, toasted Pav in butter or ghee (clarified butter). The famous Kheema Pav place in Mumbai is Irani's Cafe. Being from Mumbai, Irani's Cafe was the best place to have mouth watering food at affordable prices and continues to be the same. Kheema Pav can be easily said is in Indian Version of Sloppy Joe's with the difference being the bread is served on side. Kheema usually is dry and green peas in it, but my family prefers it without peas and little bit runny in consistency. Hence I used my mother in law's recipe and tweaked it a bit to add a twist. Hope you all like and enjoy it.



Ingredients for Marination:
1 lb Minced Chicken
1 tbsp Ginger Garlic Paste
2 tbsp Pudina and Green Chili Paste
2 tbsp Red Chili Powder
1 tbsp Garam Masala
Chopped Coriander
1 cup Curd
1 tbsp Ghee
Salt

Ingredients for Kheema:
1 chopped Onion
1 tbsp Ginger Garlic Paste
1 cup Hot Water
1 tsp Turmeric Powder
2 tbsp Red Chili Powder (I use Kashmiri Red Chili Powder and hence its not spicy, it just helps giving the dish good color. Incase you are using spice red chili powder then use accordingly)
1 tbsp Coriander Powder
1 tsp Cumin Powder
Chopped Coriander
1 tsp crushed Kasuri Methi
2 slit Green Chili
4 Cloves
2 Bay Leaf
1 inch Cinnamon Stick
4 Peppercorns
2 tbsp Ghee
3 tbsp Oil

Method:
Wash and clean the minced meat thoroughly. Strain away all the water from the meat with the help of strainer.
In a mixing bowl add all the marination ingredients and mix well. Make sure all spices get mixed correctly.
Cover the marinated meat and keep it aside for 1 hour.
Add 1 tbsp oil and 1 tbsp ghee in a pot. Let it warm up and then add Ginger Garlic Paste.
Cook until the raw smell of the paste eliminates. 
Add chopped onion to the pot and cook it on low flame until it caramelizes.
Add 1/2 cup of hot water and mix the onions well. Cook until they have caramelized.
Add turmeric powder, red chili powder, coriander powder, cumin powder and mix well.
Add 1/2 cup water and mix well. Let it cook for 10 mins on low flame.
Add salt and cook it well with pot covered.
Remove it in a bowl and keep it aside.
In the same pot add 1 tbsp oil and 1 tbsp ghee and wait until it warms.
Add whole spices in mentioned quantity and let it heat on medium flame until they release aroma.
Add marinated minced chicken to the pot and mix it well. 
Do not add water and let it cook in its own water with pot covered for 10 mins on medium flame.
Remove the lid and then add the onion mixture that we prepared and kept aside.
Mix all ingredients well and cover the pot and keep it on low to medium flame for 10 mins.
Remove the cover and mix all ingredients well and check seasoning. Adjust salt if required.
Add chopped coriander.
Add crushed Kasuri Methi and 2 green chilies.
Mix well, cover the pot for 5 mins on low flame.
Turn off the flame and serve hot with Mumbai Pav (Bread).
