Chicken Quesadilla
Quesadilla is a dish that has originated from Mexico. It main ingredient of this dish is "Tortilla" which is similar to our Indian Rotis but more on the bigger and thinner end. Tortilla could be of different varieties. The most common one is that of Corn, where the tortilla flour is made up of cooked corn and then made in flat circle. Mexicans cook Tortilla's on "comal"which is the authentic way to cook tortillas. Tortillas could be of corn, wheat, flour etc. In America there is a huge range of Tortilla's. You could pick up any that you and your family is comfortable with. Quesadilla is mainly a dish made from grilling the tortilla and filling with variety of ingredients alongwith "good quantity" of cheese. For those who do not eat meat could substitute it with Cottage cheese (Paneer), Mushroom, Black Beans. Let's have a look at this quick, delicious and mouthwatering recipe.
Ingredients:
2 Tortilla's (Use your choice of tortilla. If Tortilla not available then use Indian Paratha)
1 Onion Sliced
1 Capsicum Sliced
1 Bag of Shredded Cheddar Cheese
1 Bag of Shredded Mozarella Cheese
Sour Cream (If not readily available use Mayonnaise)
1 tsp Fagita Seasoning (If not available use 1/2 tsp red chilli powder & 1/2 tsp Black pepper powder)
1 tsp Salt
1 Packet of cooked chicken breasts ( If not available refer to recipe for the same at the end of the post)
2 tsp Oil for grilling
Preparation:
Heat up grill add 1 tsp oil and add onions and capsicum to the grill and cook it for 10 mins. Do not overcook it as we need the chrunch while eating the Quesadilla.
Add Fajita Seasoning to the mixture and cook. Once they turn light brown and few grill marks appear on them remove it aside in a plate.
Take the packet chicken breasts and heat it up in the same grill. If preparing chicken breasts at home then do as follows.
Clean and cut the chicken breasts into small cuts.
Marinate it with salt, pepper, red chilli powder. Let it sit for 30 minutes.
Heat up the grill and cook it well until it turns light brown.
REMINDER:
Before going ahead with below steps make sure you have everything organized or atleast handy before you, because by searching you do not want to burn tortilla on grill.
Next on the same grill add both the Tortillas and keep the flame "Low". We do not want to burnt the tortilla.
Remove one tortilla from the grill and keep it aside.
Add Cheese to the tortilla on grill. The quantity of cheese is completely upto one's choice. We love cheese so I had to put a good quantity. Too less is also not advised as when you flip the tortilla cheese would be the binding/holding agent for two tortillas.
Once the cheese starts to melt slowly add the Fajita mix (Onions & Capsicum that we cooked is know as Fajita mix) to the tortilla on grill.
Add Chicken to the tortilla on grill. Make sure to cover it evenly, you don't want to end up with chicken being at just one side of tortilla.
Add another round of cheese on the fajita mix. Let it cook on "Low Flame" again.
Now take the other half cooked tortilla which kept on side and apply sour cream on it similarly the way you apply butter on a bread. Make sure you cover the edges as well.
Once done put that sour cream spread tortilla on the grilled tortilla making it like a sandwich.
Press it well with a spatula and gently flip the whole quesadilla in order for the other Tortilla to cook.
When the grill marks appear remove it aside cut it in equal sizes and serve it Sour Cream/Guacamole/Salsa.
